Hey guys, so I have had several people ask for some of my recipes. So, I had this bright idea to post them on my blog so that we all can enjoy! P.S. I would love it if anyone has a few recipes of there own that they would like to share with me. I am always looking for the next hit dinner for our family!
My Quick Quesadilla Recipe
what you need:
soft shell tortilla's
one can rotel (original or hot)
skinless boneless chicken breast
shredded cheese
Sour cream
salsa
olive oil
Optional-I like to add in a veggie of some sort so it is a well rounded meal. I really enjoy frozen spinach and flavor is great.
Cooking directions:
Cut up the chicken into small bit sized pieces. Put chicken into a fry pan with a little olive oil. Just before the chicken is completely cooked add one can of Rotel; let chicken and the rotel simmer until chicken is completely cooked.
Now you will need to get your flat skillet out...I crank mine to about 425 but you really have to stick around and watch as you cook!
Place as many tortilla's on the skillet as you can, then add your shredded cheese, on top of the shredded cheese add a healthy portion of your chicken and rotel mix. (light on the juice from the chicken), then you can add you veggie if you wish. Last, top with a second tortilla shell and let them cook until crisp on both sides. Heads up...you will need a large spatula and both hand to flip these bad boys! I hope you enjoy them as much as we do.

January
This year we took a Landreth family vaction with to Red River, NM to ski and snowboard. We had a blast and it was really fun to hang with the family. Austin, Josh, Kolton and Dad hit the slopes everyday both morning and afternoon. Mom L went in the mornings and I went in the afternoons. Hudson and Logan loved the snow and playing outside. And for those of you that don't know...Courtney had a really good reason not to ski...She is PREGNANT!!! Hudson is going to be a big brother in August. We are all so excited to have a new addition to the family.
